well, its more than a bit ironic now, since my weight has soared in the past 4 years, but at the age of 59, in order to deal with persistent edema, i eliminated all but the healthiest carbs, leaving room for greens and yoghurt.  i didn't mind at all, because i could eat any time i was hungry, as long as "the white stuff" wasn't on the menu.  before i began i researched and discovered many of my favorite foods were totally acceptable.  it was a little pricey eating mostly high quality protein, but i was working steadily at the time, and loved the treats i could have without remorse, like cheesecake made with a sugar substitute, and all the whipped cream i could stomach.  although i enjoyed good breads and ate huge portions of rice in my past life, those i had to bid adieu.  because i was in physical therapy for a work related injury, i had access to a cooperative trainer.  i slowly began doing light circuit training as instructed.  the more protein i ate, the more energy i had, and within 2 weeks, the edema was a thing of the past, and the weight began falling off so fast people at work, and even my trainer were astonished.  my blood cholesterol ratio inverted, so that my hdl was higher than ldl in a complete reversal.  at 60 i was the fittest i had been in my entire life, and had dropped 70 lbs from 300 to 230.

now i have to do it all over again, but i don't see how i can afford to maintain that regimen.  except for those times i was invalided completely and had to rely on meals on wheels, my eating habits remained nearly the same.  i never had the need to eat the old way, and never ate forbidden foods.  that is until i moved into this senior apartment complex, and faced weekly free delivery of bakery products.  guava and almond and peach filled pasties wore me down.  i am holding weight, but it is far too high, and the edema is an issue again.  i hope a new and lower stress life in hawaii will serve as inspiration to pare down again.  it won't be easy as the food budget is going to suffer.  i'll check back in after the move.

It is expensive to get the protein in, that is for sure.  My son dieted when he lived at home, lost a bunch of weight - got in incredible shape.  Moved out with his girlfriend and was going "ummm how do I afford to eat the way I have been eating"

He had to give up cottage cheese he couldn't afford it!   Cry


Good luck to you Jack and maybe Hawaii will be easier, more relaxed.... hey maybe you will find ways to burn off some calories!

So many great posts here, thank you all for sharing. What you've achieved Sal is great, how you let yourself take time and not try to loose too much too fast. I am trying to do that too.... Like you, Jack I eliminate the bad carbs. I plan my meals and don't skip breakfast. Exersizing works well for me, even in my worse weeks I workout some.

I gained 10 kg (22 lbs) in a year and I have almost the double to loose to feel good about myself again. I have to be more serious about it. For now I managed to reverse the process in gaining even more but I really want to achieve more.

I think that the way you did it, Sal, in not eating too late and eating the bigger meal in the middle of the day instead of for dinner could be just what I need to do right now.

Going for another gym session round my cousins later, I'm really enjoying it and it's fun doing it with my little cousins too, we always have the music up loud too and we will have a healthy dinner afterwards, I am starting to feel good about myself, I know I have lost weight because my jeans are a lot looser and keep almost falling down, I am also walking to and from the office on the 3 days I work which must be helping

It's great everyone is doing well, keep it up guys

I bought a dress!!  (faint, shock, horror - those of you who know me will know what I think of dresses!!)

I was a size 22 before I started to lose weight. Last week I purchased a lovely dress, size 14!!  and it fits like a glove, and I feel great wearing it!!

The Best Vegetarian Chili in the World

8 Servings, Prep Time: 15 Minutes, Cook Time: 1 Hour


Description:

Break out your soup pot and fix up a batch of this delicious, spicy vegetarian chili today! It's ready in no time, and packed with vegetables, beans - and flavor!


Ingredients:

1 tablespoon olive oil
1/2 medium onion, chopped
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 stalks celery, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
2 (4 ounce) cans chopped green chile peppers, drained
2 (12 ounce) packages vegetarian burger crumbles
3 (28 ounce) cans whole peeled tomatoes, crushed
1/4 cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn


Directions:

Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers. When vegetables are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes.
Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes. Stir in the corn, and continue cooking 5 minutes before serving.
